Roasted Garlic Potato Salad

Ingredients
- 2 lbs redskin potatoes (quartered)
- 2 T olive oil
- 1 head garlic (roasted at 325° w/ 1 T olive oil until mushy)
- 1/4 C Balsamic vinegar
- 3/4 C olive oil
- 3 cl garlic (chopped)
- 2 shallots (chopped)
Instructions
- Heat 2T of olive oil in an oven-proof pan until smoking, sear the potatoes in the oil, then roast in the oven until done.
- Whisk together the vinegar, olive oil, garlic and shallots. Season to taste.
- Toss the potatoes into the dressing, then squeeze the contents of the roasted garlic into the bowl.
- Mix, and serve warm.
