Roasted Garlic Potato Salad

Ingredients

Instructions

  1. Heat 2T of olive oil in an oven-proof pan until smoking, sear the potatoes in the oil, then roast in the oven until done.
  2. Whisk together the vinegar, olive oil, garlic and shallots. Season to taste.
  3. Toss the potatoes into the dressing, then squeeze the contents of the roasted garlic into the bowl.
  4. Mix, and serve warm.
